Laura Burak MS, RDN, a registered dietician, walks us through how she makes her Cinch Chili for Heart Health Month. Chili is one of the simplest and most heart-healthy one-pot meals you can make for the whole family on a CHILLY day. She uses lean ground turkey in this video but you can also use ground chicken or beef, or tofu or lentils or just keep it to beans to make it vegetarian or vegan.
Throw everything into one pot with the bare basic spices of salt, pepper, chili powder, cumin, and smoked paprika, and now you have a chili in a snap.
Makes 6 (1 cup) servings
Gluten-free, Dairy free, Nut free
Ingredients:
- (2) 15 oz cans of any drained, rinsed beans such as kidney and black bean
- 28 oz can of crushed tomatoes
- 1 small chopped onion or small container of mirepoix (chopped carrots, onions, celery)
- 2 garlic cloves, chopped or 2 teaspoons garlic powder
- ¾ cup low sodium vegetable broth or water
- 2 tsp. salt
- 1 tsp. fresh ground pepper
- 2 tsp.chili powder, 2 tsp. cumin, 1 tsp. smoked or regular paprika
- Dash cayenne pepper (optional for spicier chili)
- 2 Tbsp. olive oil
- Optional extra veggies such as spinach, mushrooms, peppers
- Optional guac, sour cream, yogurt, onions and cilantro for topping
Directions:
- Heat the pot on a medium flame and add olive oil.
- Add chopped garlic and saute for about 1 minute.
- Add mirepoix.
- Season with salt and pepper
- Saute until soft, about 3 minutes.
- Add ground turkey and saute for a few minutes until almost cooked through.
- Add the can of crushed tomatoes, rinsed, drained beans, and broth.
- Add any additional veggies like chopped peppers if you are using them.
- Add all the spices.
- Simmer on low with lid partially on for about 25-30 minutes or more.
- Serve over roasted veggies or ½ cup rice, quinoa, or other grains.
- Add optional toppings like guacamole, cheese, onions, and sour cream.
